Shaun Hill is one of Britain's most enduringly successful chefs, starting his career in the 1960's in some of London's most prestigious restaurants. Then Hill moved to more rural postings, most notably the Merchant House Restaurant in Ludlow which was hailed 14th best in the world, and since 2007 Hill has run the Walnut Tree Restaurant in Wales. He is a multi-award winning chef and has held a Michelin Star for 25 years. Shaun will give us a culinary demonstration and will be interviewed about his life's work and achievements by John Retallick. John has had a diverse career as a head chef on cruise liners and major hotels in London, lecturer in Culinary Arts for the British Army and catering colleges, as well as a top judge for international culinary awards. Chef Bruce Lim is a regular face on the Asian Food Channel, starring in Tablescapes, where he travels through the Philippines exploring and teaching about traditional Filipino cuisine and The Boss, which showcases his take on modern Filipino dishes. Chef Bruce also took up the role as a celebrity chef judge on AFC’s Next Celebrity Chef. A graduate of Le Cordon Bleu in London, and having worked in some of the best French kitchens in the world, as well as under the tutelage of Gordon Ramsay, Chef Bruce now lives in the Philippines and has opened his own restaurant Chef’s Table.

Chef Bruce recognises that as Asia opens up to more international travel, guests are looking for a dining experience that reflects their location and gives them a feeling of connection; an emotional response. To deliver, restaurants must engage their local community, flavours and customs in the kitchen. Chef Bruce gives his thoughts on how to connect with tomorrow's diner, how he brings a Filipino influence to his classically trained cooking and how the chef of the future is part chef, part entertainer and part entrepreneur.
